Vegan Mac and Cheese

  • Almond milk (unsweetened)

  • Vegan butter soft or room temp

  • Kite hill Ricotta cheese

  • Just Egg

  • Kite Hill Chive cream cheese

  • Miyoko aged farmhouse cheddar block cut into cubes

  • Mikoyo aged farmhouse shredded cheddar (reserve some for topping)

  • Small box elbow

  • Dried Oregano

  • Black salt aka kala namak

  • Seasonings

Combine ricotta, just egg and seasonings. Put aside

Boil elbow Mac til just a tad underdone. Drain and in same pot combine pasta with:

  • Butter

  • Ricotta cheese mix above

  • Both cheddar types

  • Milk - use this to loosen up mix but you don’t want this too saucy

Pour into casserole dish

Sprinkle reserved shredded cheese on top.

Cover and put into oven (375)

When it gets bubbly take top off and let top brown.

Let cool a bit before scooping out.
